Tonight on Chef On A Mission, celebrity chef and restaurateur Simon Gault continues his quest to change the way people eat, with a visit to the Royal New Zealand Police College, in Porirua.

Simon’s mission is to experience the police recruits’ way of life, try their food, then cook them a midwinter Christmas feast on their graduation day, using only local ingredients and his trusty ‘toolkit’ – a box of spices, sauces and secret ingredients he never goes far without.

With 60 constables graduating after five intense months training, expectations for the feast are high. The pressure’s on in the kitchen, and there’s a mad rush to get the meal ready on time. Can Simon stay on the right side of the law, and give these new police officers a graduation feast to remember?

“This mission was truly challenging,” says Simon. “I’m full of admiration for the recruits and the intense training they go through at police college. Then going out on patrol in Wellington and seeing what the cops have to deal with every night was a real eye-opener. It’s all left me with huge respect for the men and women who keep our country safe. To be able to cook the graduation feast for our 60 newest police constables was a privilege and a pleasure.”
