The Conviction restaurant has been open for two week but Lisa’s waiters are struggling, and when she asks some of her team to do things differently, an argument breaks out and a team member is sent home. Curley’s kitchen team is also struggling, especially Jared, who has only just been released from prison and is finding it hard to adjust to life on the outside, balancing long hours at the restaurant and family commitments. To try and encourage the trainees to up-their-game, Curley announces he’s asked a renowned food critic to review the restaurant. The trainees with the best feedback will receive a reward to give the friend or family member who’s helped them the most. But when Lisa and Curley announce who’s won the critic’s report, one of the trainees doesn’t take the feedback well.

It’s the morning after the first night’s service. Curley and Lisa give the trainees a pep talk, but one of Lisa’s waitresses is late – she hasn’t turned up after an ex-partner collected her from work the previous night. Worried, Lisa calls Silene’s family, and then calls the police to report her missing. Meanwhile another of the waitresses, an ex-drug addict who used to be a policewoman, is upset because the local paper has written an article about her. Curley gathers the trainees together and announces that he’s volunteered to do a lunch for the homeless, and invites them to join him in giving something back to the community. Curley, Lisa and the trainees cater a lunch at a homeless shelter and for Kristy, who recently lived in the shelter, it’s a particularly poignant experience.

It’s opening night at Conviction, but will the public support a restaurant staffed by former criminals? The restaurant doors open and the trainees are concerned about how they’ll be perceived by the public. Curley believes one of his team isn’t pulling their weight and they argue in the kitchen. But service is a success and they get through the night with positive feedback from guests. At the end of the night, one of Lisa’s waiters bursts into tears, worried she can’t handle the long hours. Curley gives his kitchen staff a pep talk, as another of the waitresses leaves to speak with an ex-partner who has turned up uninvited to collect her from work.

Curley and his restaurant manager Lisa Parker have just two weeks to train up a team of convicted criminals to run a fine dining establishment. Curley announces to the trainees that there’s one place left in his kitchen to fill, and he’s heading to a prison to meet some men who about to be released. Curley and his sous chef, Vital, drive to Woodford Correctional Centre, where they meet four prisoners who all want the chance of a job on the outside.

Tonight, when Curley realises that none of the trainees has eaten the kind of food they’ll be cooking and serving, he takes them all out for dinner at an award-winning restaurant. One of the trainees reveals he has outstanding criminal charges and will be back in court; one of the trainees drinks too much, and another risks their parole conditions by being tempted to drink. The next day, while training continues, Jared attends parole and is breath tested.
