The final MasterClass follows the MasterChef New Zealand semi-final. Just the two finalists remain, and they are just days away from the MasterChef Grand Final.

Josh Emmet, Simon Gault and Ray McVinnie celebrate the occasion by declaring ‘game on’. Their mission is to cook their favourite wild game dishes. First up, McVinnie makes his ‘heavenly’ duck salad, a South-East-Asian inspired dish combining beautifully cooked duck with a simple, but heavenly, Thai marinade and crunchy vegetables.

Emmet roasts a rack of wild pork, and reveals the secret to achieving the perfect crunchy crackling. While Gault pulls out all the stops to create a gourmet game pie, combining venison, duck, wagyu beef and veal for the ultimate meat lover’s delight.

It is a great way to celebrate the end of the MasterClass series, and for the two MasterChef finalists, a hearty feast before the rigours of the Grand Final – when it will be well and truly ‘game on’.

Tonight’s MasterChef MasterClass goes international (at 7.30pm on TV ONE). Following the Top 4’s Melbourne challenges, Josh Emett and Simon Gault hold a MasterClass at Maze, the restaurant Josh runs in Melbourne for Gordon Ramsay, while legendary local chef Teage Ezard cooks his signature red duck curry at his restaurant Gingerboy.

First, Gault, the mad scientist experiments with some molecular gastronomy, creating a nitro gazpacho on a king crab salad with melon caviar and red pepper pearls. Such a dish may sound daunting for the home cook, but Gault breaks down each process into simple steps that anyone can follow.

Across town at the South-East-Asian-influenced Gingerboy, Teage Ezard shows how to make his signature red duck curry from scratch, from hand-making chicken stock and red curry paste, then cooking the duck perfectly, right through to assembling the finished dish. Follow Ezard’s recipe and you’ll be able to make the perfect duck curry.

Then Emett reveals how to make a stunning tuna and shiitake mushroom dish from his award-winning menu at Maze, and how to plate it up exactly like a restaurant meal.
